The poke bowls are amazing, this was our first to this location. My husband felt that staff was rushy and not too helpful for a first time customer. Our bowls were great though, I felt the scoops were a little small. One great thing they have a station after you get your bowls that has spicy mayo, eel sauce, soy, and wasabi so if you want more sauce it's complimentary. They have great seating out in the courtyard lounge that is indoors.

The food was amazing, not the best sushi I've ever had but it's a sushi bar essentially so I wouldn't expect the best quality meat. The service is fast since you're picking out your own sushi pieces which is so nice. They also offer a wide variety of drinks. The inside doesn't have too much seating options but it's located inside of a building that offers more seating. Other than that, there's not much to the ambiance of this place. I love that they give you different size options for the boxes. The bottom box was $45 for 2 pounds The left box was around $35 and the top right box was around $25, and all prices include a drink we each got!

I'm so glad that we came here to Bellevue for their sushi's. I'm not sure of all the names, but the one on the far left in my photo that has the seared salmon is the one of the best one I've had, so far! All that sushi was a little over $19.00 on my tray. Anywhere else, that could've been way more. Great price, packed with seafood and it was good! Nice to see that they were bringing out fresh sushi and all the workers are all cheerful. For the interior itself that was very clean and all the condiments were made available. One of the only things that bothered me was the sushi bar. It can get a bit hectic because some customers don't give you much space while you're trying to pick something out.

sushi by the pound, say less!!! fish was incredibly fresh, had a variety of rolls and nigiri, and the box pictured costed $19!!! insane deal for how good it was imo

Super fun experience getting to pick and choose your own rolls. My friends and I shared a couple boxes and the quality was great for its price. I love the variety! If ever I'm town again this is a must.

Great price and also very good Very chill. Cant recall if there's seating. Can't wait to go back and buy more.

We ate at FOB in the past for their excellent poke (see original review). With the recent 'controversy' (or bored people on social media), I made it a point to return and eat some sushi. To say this place is popular is an understatement. Diners ate inside the restaurant, outside in the lobby area, or had takeouts. I observed a constant flow while we ate inside. The location is in the financial/business zone of Bellevue. Parking is nearly non-existent if not for the fact it is Sunday night. We found street parking nearby. Diners seemed to have walked there from nearby high-rise condos and apartments. Many are young adults. Service is behind the counter only. We helped ourselves filling a tray or a box with rolls, inari, and/or nigiri. Sushi is sold by weight. Prices are very reasonable. The tables aren't cleaned regularly, but the attention on the sushi is precision, refilling and refilling, keeping the pieces rotated. The Food: Sushi Rolls: Can't easily describe other than via my photos. The rolls aren't given names, only ingredients. The seafood to rice ratio is excellent. I particularly like the varieties that have a dollop of seafood on top. Inari, tofu skin pockets: The inari (seasoned tofu skin pockets) has a layer of rice underneath with seafood on top that fills at least half the pocket. The combinations are excellent. Nigiri: The nigiri variations are less than a typical sushi restaurant. They also don't survive sitting exposed and premade as well as the rolls and inari. We took a few varieties that looks the best and skipped many. Our orders of 12 pieces plus 14 pieces plus 6 pieces costed $21, $22, and $12 respectively. Or 32 pieces costed $55. Excellent price for the volume of food!

Poke bar turned into Poke & Sushi Bar now, they are technically separate but in the same room and cashiers next to each other. Price is decent for having all these sushi options, although too heavy on the rice for me. Lots of freshly made rolls and nigiri, especially due to its popularity with being semi-recently opened now, and the news scandal. But lines being long still go by fast enough, and sushi comes out even faster which is good that they keep them filled well. This location is better than the seattle one since here you can wait inside the building space outtside of the actual eatery, but the seattle location only has a small space inside and if the line is long requires a wait outside the door. The tamago is a little too sweet for my liking and its in a few of the rolls. Overall would be a 5 star if they put less rice (I think some of them were overfilled with rice, more than a normal portion) ...especially for low carb people like me who cant eat that much but want more sushi. Or maybe some low carb options like using cauli rice would make this an extremelyyy popular spot since not very many places offer low carb options, and practically no sushi places in general.

FIRE pick your own sushi spot - love the variety and the price is well worth it ($14.99 per pound, your choice). There's a bit of a wait as the lines can get really long cause it's popular, so be prepared to wait for 15-20 minutes. A bit busy, but worth the try and definitely worth coming back to.

Came her for the sushi this time and it's as top notch as the poke. I love the variety of sushi they have: nigiri, sushi roll, hand roll, sashimi, tofu pockets, etc. All the items are good quality as well and distinct. They all taste different. Service was good. Looks like they refill each sushi as it gets low or if it's close to the 4 hours mark. The place is quiet and definitely catered to the people who work near by. Seatings are mostly for 1-2 people. Price was crazy good. we got 25 pieces and it was under $40! If parking was better I would come here more often.
